With the unofficial start to summer coming up this weekend, it’s time for me to dust off the grill, shuck some corn and break out my barbecue chicken recipe. But here’s what I love to throw on the grill besides meats and veggies: fruit! Most people don’t think about grilling fruit, but I like to end every barbecue with some seared pineapple or smoky peaches, caramelized to perfection. Everyone loves it … and it’s so much easier than baking a pie.
I throw down thickly sliced pineapple wedges to sear without any adulteration, but adding a little sugar and cinnamon never hurt. Dinner Then Dessert has a great recipe for that.
Prepping peaches with balsamic vinegar and brown sugar brings out the fruit’s sweetness and results in a dessert that’s like peach cobbler without all the fuss (here’s the recipe from Salon). Top with a scoop of ice cream for a real treat! Or throw a few slices on some greens and sprinkle with goat cheese and blueberries for a summery salad like this one from Two Peas & Their Pod.
And this summer I’m going to try something new: grilled watermelon. I’ve never considered searing watermelon, since it’s kind of like why mess with perfection? But this Kitchn recipe that involves a spicy rub is just too intriguing to pass up.
